Careful Selection

All grapes from our own vineyards are picked by hand. This implies rigorous selection directly on the vine - only fully ripe, unscathed fruit ends up in the cellar. By the way: we have no irrigation systems in our vineyards. It is true that in extremely dry years it may happen that we forgo one or another harvest from young vineyards. On the other hand, the vines will root substantially more deeply, thus releasing extra aromas and flavors as well as power into the grapes.
